    What a nice and surprise gift added to the beautiful cookbook, THANK YOU!
    Wonderful book. Someone who handled / packed the book somehow knew that I like Harry Potter and also to which house I was sorted, since there was a beautiful page marker with the name of the House. Magical, thank you so much whoever it was who gave me the special gift! The book itself is wonderful, I have not tried any yet, but I can read the recipes, and I think I would be able to enjoy all the recipes, changed those with meat or seafood, to without the meat nor seafood and if I want to, also add meat or seafood into those without meat or seafood. What is important is the combination of herbs and spices. Even that I could change, spicier or less spicy—

    Might be Labeled ‘Mostly Meat and Time-comsuming.’
    I appreciate ATK for their labeling as well as the tastiness of their recipes. That said, I’m a vegetarian and usually short on time, so I look for recipes that are both vegetarian and relatively ‘fast.’ (They consider 45 minutes fast.) Breakfast has 6 out of 13 labeled fast and veggie. Nearly half is pretty good! Soups has just 3 out of 29, or 4.7%. (Boo! I love soup.) Burgers, Sandwiches, Tacos has 6 out of 27 or only 4.5% (you’d think they’d be fast.) Salads has the worst ratio of 7 out of 30, or 4.3%, other than Sunday Suppers. which has 0, of course, due to longer prep. And Everyday Dinners has 9 out of 38, or 6.2%. The More Veggies, Please section at the end are sides. 3 out of 4 are fast and vegetarian. But why include one with meat that also takes 1 hour 10 minutes to prepare??? Okay, I’m used to not finding exactly what I want in cookbooks. I don’t mind occasionally substituting veggie ‘meat’ for chicken, beef, sausage or bacon, allowing for more recipes that way. I found the Breakfast and the Everyday Dinners sections the most useful. In the latter I skipped ‘Crispy Tempeh with Sambal Sauce’ (what is kecap manis?) and made Aloo Gobi (50 min but I love this dish). Also Stuffed Delicata Squash, very good. And the Orecchiette with Navy Beans, Brussels Sprouts and Bacon, substituting tempeh bacon. Excellent! Some of the recipes are pasta based and I generally already make these. Or else they’re Asian and rely heavily on too much sodium, off-limits for me. This is a good cookbook except for its reliance on more meat than I’d like and the length of time required to prepare the recipes. 2 stars off for that.

    Inspiring
    I love this book. I’ve been interested in having a more plant forward diet but I wasn’t fully ready to get rid of meat. Not only does this book provide you with stunning photo accompany fantastic recipes, but it starts with a basic fundamentals on stocking your pantry for a mostly meatless lifestyle. It feels like a truly holistic experience.American Test Kitchen is also my most trusted brand for inspiring cook books. I highly recommend to all skill sets.

    Plant forward recipes with meat to satisfy the family
    This is a big book with a lot of recipes, and I haven’t had a bad one yet. The best thing about the book is that whilst it is plant forward there is some meat included in most (not all) of the recipes which makes it a little easier for the family to like them. The ingredients have all been easy to source at my local grocers.The lamb tagine and the Caldo Verde were absolutely delicious as were the sweet potatoes and poblano tacos. The savory oatmeal was great (first time I have had savory oatmeal), and the red curry was good. I have a long list of other recipes that i am looking forward to trying out.

    great cookbook for introducing veggie-forward dishes to your diet
    Really have enjoyed this cookbook. It is quite difficult to let go of the subconscious need for protein – and this cookbook gives you tips and tricks to get the right balance in your diet while also creating veggie-focused dishes. The book itself is a wonderful quality and has survived many trips to the wet, dirty, crumb-coated kitchen counter unscathed.

    Disappointing with too many meat recipes
    This book is so disappointing. It has recipe after recipe of meat. Yes, there are many vegetarian recipes, but by “Mostly Meatless”, I took this to mean that it was mostly vegetarian. With the green book cover and title, my expectation was that I would see meat in just a few recipes. If you eat meat and want to up your vegetables, then you will enjoy this book. If you are a vegetarian, there are a lot of plant based recipes, but for me there are just too many meat recipes. The title of this book is greatly misleading.
